ACAI ANTIOXIDANT PANCAKES

INGREDIENTS

Pancake
1 Vanilla OptiFuel Packet
Acai berry powder (2 tbsp)
Oat Flour (also gluten-free) - (1/4 cup)
Egg (n. 1 large)
Coconut milk (1/4 cup)
Honey ( 2 tbsp)
Dressing
Coconut greek yogurt 0% fat (1 cup)
Acai Berry Powder (2 tbsp)
Coconut milk (2 tbsp)

DIRECTIONS & NUTRITIONAL ADVICE

In a bowl, mix all the ingredients to make a batter of flowing consistency.
Keep a non-stick pan on medium to high heat. Ladle the batter into the pan to make a pancake (8 suggested).
Cook on one side until bubbles form, then flip. Cook until golden on both sides.
Mix the yogurt, acai powder, and coconut milk to prepare the dressing until the mixture is fluid but not too runny, then pour over the pancakes.

Eat it as a healthy, low-sugar, and antioxidant snack or add to your breakfast
