INGREDIENTS
Pancake
Acai berry powder (2 tbsp)
Oat Flour (also gluten-free) - (1/4 cup)
Egg (n. 1 large)
Coconut milk (1/4 cup)
Honey ( 2 tbsp)
Dressing
Coconut greek yogurt 0% fat (1 cup)
Acai Berry Powder (2 tbsp)
Coconut milk (2 tbsp)
Pancake
DIRECTIONS & NUTRITIONAL ADVICE
In a bowl, mix all the ingredients and make a batter of a flowing consistency
Keep a non-stick pan on medium to high heat
Ladle out the batter into the pan and make a pancake (8 suggested)
Cook on one side until bubbles form, and then flip
Cook until it's golden on both sides
Mix the yogurt, acai powder, and coconut milk to prepare the dressing until the mixture is fluid but not too liquid, and pour over the pancakes.
Eat it as a healthy, low-sugar, and antioxidant snack or add to your breakfast
